Just eat more fruits and veggies please... A lot of interesting empirical data coming out about how a #plantbased diet is not only healthy but may in fact combat type 2 diabetes and metabolic syndrome. There is a misconception that eating too much simple carbohydrate is causing type 2 diabetes but what we are learning is that it has more to do with a diet high in saturated fats (those long chained fatty acids) which are leading to lipid deposition in our liver, skel muscle and pancreas. This causes a lipotoxicity or unchecked inflammation which in turn leads to a mucking up of our delicate gluco-regulatory mechanisms, giving rise to insulin desensitivity and type 2 diabetes. From there we have a dysregulation of glucose homeostasis and it is at that point when simple carbohydrates exacerbate the hyperglycemia. I want to be clear- this pertains to type 2 diabetes, NOT type 1, which is an autoimmune destruction of pancreatic insulin producing cells (beta cells).
